Miso Comforted Soup
Being the carnivore that he is, & takes any given chance to poke fun at my eating style, Hubz has re-named this favorite of mine "Compost Stew" based on its looks, he claims. Thanks, hun! I say it warms my soul, nonetheless....
Miso Comforted Soup
12c water
3c cooked brown rice, warm
2c chopped steamed kale
4 TBSP slivered green onions
3/4c Azuki bean miso
1/2c sweet white miso
1 TBSP coursely ground sea salt
Over medium-low heat, bring water, rice, kale, green onions & sea salt to a low simmer, cover & allow to simmer approximately 20 minutes; stirring occasionally.
Briefly bring to a boil.
In a bowl, mix miso with 2c. of the heated soup broth. Add it back to the soup & turn off the heat to mix in.
This makes approximately 16 cups of soup.
You can add more, or less, miso depending on the strength of flavor that you want. If you want a stronger flavor, add more of the Azuki Bean Miso. For a more mild taste, use less of the Azuki & more of the Sweet White. Like most of my recipes, this is easily adjusted to suite your tastebuds.
