Nutty Fruit Cereal Cookies
Ingredients
1 c. whole wheat flour
½ c. flax seed meal
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1c. packed brown sugar
1c. vegetarian butter, softened
1c. unsweetened applesauce
2 eggs
1 tsp vanilla
2 c whole wheat cereal of flax flakes
2 c rolled oats (not quick-cooking)
1-1/2 c chopped walnuts
1-1/2 c mixed dried fruits (i.e. raisins, dries cranberries, dried cherries, dried blueberries)
Method
Pre-heat oven to 325˚F. In a medium bowl combine flour, flax seed meal, baking powder, baking soda, & cinnamon: set aside.
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar (applesauce) & brown sugar. Beat until combined, scraping sides of bowl occasionally. Beat in eggs & vanilla until combined. Beat in as much of the flour mixture as you can with the mixer. With a wooden spoon, stir in any remaining flour mixture. Stir in wheat cereal, oats, walnuts & dried fruit.
Drop by well-rounded teaspoonfuls 2 inches apart onto cookie sheets lined with parchment paper. Bake 12-14 minutes or until golden & set.
Cool on cookie sheets 2 minutes. Transfer to cooling rack to cool completely. Keep sealed an airtight container.
Makes about 5 dozen.
