Raisin Energy Bars

Perfect little snackers on the go, a quick pick me up, or wonderful for a guilt-free snack for the kiddos.

Raisin Energy Bars
Ingredients
4 egg whites (or 2 whole eggs)
1/4c sugar (or unsweetened applesauce, or honey)
4 tsp grapeseed oil
1-1/2 TBSP cinnamon
2 tsp vanilla extract
2c plain or low-fat granola
1c raisins
4 TBSP toasted wheat germ

3 TBSP un-salted sunflower seeds
4 tsp flax seeds

Method

In a large bowl, beat egg whites & sugar with a whisk until smooth. Beat in oil, cinnamon & vanilla. Stir in remaining ingredients; blend well.
Generously coat a 9x13-inch baking pan with non-stick cooking spray.
Turn raisin mixture into pan; pat to form one even layer.
Bake at 300F for 25-30 minutes, or until golden brown.
Cool 5 minutes in pan. Loosen edges with spatula & invert onto wire cooling rack to cool completely.
Cut into individually-sized bars. Store in an airtight container or pack in small plastic bags for on the go snacking.

Everytime I make these, the edges crumble as I remove it from the pan. No worries! We scoop up the crumbles, bag it & have it as cereal! Starlet likes to make her breakfast "compost" from the crumbles, too. I'll post her "recipe" for that soon!
