Baked Stuffed Honey Figs
Ingredients
2/3 c fresh orange juice
6 TBSP (Greek) honey
12 ready-to-eat dried figs
1/4 c shelled pistachio nuts, finely chopped
1/4 c ready-to-eat dried apricots, very finely chopped
1 tsp sesame seeds
Greek yogurt, or plain soy yogurt, to serve
Method
Pre-heat oven to 325F.
Place orange juice & honey in a pan & heat gently until honey has dissolved. Add figs & simmer for 10 minutes, until softened. remove from heat & let cool in liquid.
Meanwhile, prepare the filling. Place the nuts, apricots, sesame seeds & remaining tablespoon of honey in a bowl & mix well.
Using a slotted spoon, remove the figs from the cooking liquid & reserve. Cut a slit at the top of each fig, where the stems join. Using your fingers, plump up the figs & stuff each fig with about 1 teaspoon of the mixture. Close the top of each fig & place in an oven-proof dish. Pour reserved liquid over the tops.
Bake in pre-heated oven at 325F for 10 minutes, until hot. Serve warm or cold, with yogurt.

I adore every ingredient in this recipe! When fresh figs were at the farmers' market in the late summer and fall, I simply couldn't get enough.
